toasted coconut camping granola
INGREDIENTS
1 cup raw pepitas
1 cup raw sunflower seeds
1/2 cup unsweetened coconut flakes
1 cup raw almonds
1 cup raw cashews
1/2 cup raw walnuts
1 cup golden raisins
1/4 tsp ground cinnamon
1/4 tsp ginger powder
1/4 tsp ground cardamom
1/4 tsp salt
DIRECTIONS
Using a large sauce pan, toast the pepitas and the sunflower seeds on low heat for about 5 minutes, stirring occasionally. As they begin to brown (and pop!) they are ready. Add to a large mixing bowl.
Using the same pan, add in the coconut flakes, and on low heat, toast for a couple minutes or until they begin to brown on the edges. Add to mixing bowl.
Add the rest of the ingredients to the mixing bowl, stir to combine.
Go camping. Be in nature. Eat granola. Be happy.
