banana walnut bread
INGREDIENTS
1 cup whole weat flour
1/2 cup all purpose flour (einkorn flour is my favorite here)
2 tsp baking powder
1.5 tsp cinnamon
1/4 tsp cardamom
1/4 tsp dried ginger
3/4 tsp baking soda
1/4 tsp salt
2 eggs
1 cup mashed banaas
1/4 cup golden raisins
1/2 cup sunflower or avocado oil
1/4 cup maple syrup
2 tsp vanilla extract
3/4 chopped walnuts (divided)
DIRECTIONS
Preheat oven to 350. Coat an 8 1/2 inch pyrex or ceramic loaf pan with oil or cooking spray and dust with flour. Set aside.
Whisk both flours, baking powder, cinnamon, ginger, cardamom, baking soda, and salt in a medium bowl.
Stir eggs, bananas, raisins, oil, maple syrup and vanilla in a large bowl. Add dry ingredients and stir to combine. And 1/2 cup of the walnuts to mixture. Spread batter in the oiled pan. Sprinkle the rest of the nuts on top.
Bake bread until golden brown and when a wooden skewer comes out with moist crumbs attached. 45-55 minutes. Cool for 15 minutes, then serve!
Wrap in plastic wrap or aluminum foil to keep moist. Store at room temp for 3 days.
