strawberry apple oatmeal crisp

INGREDIENTS

1 pint fresh strawberries, washed, quarterd

1 pink lady apple, cubed

2 tbsp maple syrup

1 tips arrowroot starch (or cornstarch)

1 tsp cinnamon

1 tsp vanilla extract

1 cup old fashioned oats

3 tbsp coconut sugar (or sucanut)

3/4 cup chopped walnuts

1/2 tsp salt

1/4 cup coconut oil, heated so that it is in liquid form

INSTRUCTIONS

Preheat oven to 350. Lightly grease a pie pan or medium sized baking dish with oil or cooking spray.

In a medium bowl, throw in strawberries, apple, maple syrup, starch, cinnamon, ginger, cardamom, and vanilla extract. Stir to combine. Transfer to the prepared pie dish. Spread in an even layer.

In another bowl, combine oats, sugar, walnuts, and salt. Stir to combine. Then pour coconut oil over mixture and stir until well integrated.

Sprinkle oat mixture over top of the fruit mix evenly so that it covers the fruit layer.

Bake for 40-45 minutes or until fruit is bubbling and the oats are golden brown.

Serve with ice cream - I love to use Van Leeuwen’s vegan honeycomb ice cream.
